Cookie Tips!

Two-Minute Cookie Rule!
For soft, chewy cookies, remove from oven about two minutes before they are
done as they will continue to bake on the hot baking sheet.

Store soft cookies & crisp cookies separately.
Store cookies in an airtight box or tin to keep them crisp.
Separate layers with sheets of wax paper or aluminum foil.

Using Eggs!
Use fresh eggs in your cookie recipes-white or brown are fine.
Eggs help make your cookies more tender, moist, and light.
Using fresh eggs add more air into the mixture.
Adding additional egg yolk will make the cookies more cakier.

Don't substitute a low-fat spread for butter or margarine,
or your cookies will tend to turn out dense & may not brown.

The longest you can keep any homemade cookie dough is 3 months maximum,
& sometimes even that is a bit too long as the spices change flavors over time.
-Lady P

To keep cookie cutters (especially plastic ones) from sticking to cookie dough,
lightly coat them in some vegetable oil.

Soften Hard Cookies!
Put your cookies in a plastic bag piece of fresh bread.
The next day you will have soft cookies again!
-Linda

Cookies have to be completely cool before you store them,
or they will "sweat" and get soggy.

Small ice cream scoops are perfect for making uniformly sized drop cookies.

Use only the top or center racks of your oven --
your cookies are much less likely to burn.

Preheat your oven 10 to 15 minutes before you start mixing the ingredients
(unless you need to chill the cookie dough).

Don't grease pans with butter or margarine.
Use solid shortening like Crisco.
Butter tends to make cookies brown too fast & oils & sprays tend to cause sticking.

Use a pancake turner to remove cookies from baking sheets.
This will keep warm cookies from tearing or breaking.
-Pat

I have a drawer that has different types of candles, candle sniffers, and such in it, but it would never fail
when I went to retrieve a candle taper from the drawer, it would be scuffed or worse...cracked or broken.
So I figured out the best way to keep my tapers intact and from rolling around and hitting each other..
..paper towel tubes.
I recycle my paper towel tubes and place three or four of my tapers in it, and place it in the drawer.
They fit snugly and safely in the tube and no more bumping into each other, breaking or scuffing.

I have the best tip for all. This is about apples! Did you know that apples that are left over from one season
are frozen to preserve for the next season.
When you get a last years apple it is soft , dry, and grainy when you bite into it.
A fresh apple is hard, juicy and crisp. When you cook with a last year apple it will not hold up and turn to mush.
To tell the difference between the two:
Look on the bottom of the apple, the center that looks like a flower should be closed up tight.
If it is open at all it is last years apple and will not be worth the money that you paid for it,
which is alot  now days. This has worked for me everytime I buy any kind of apple. I hope it works for you.

Here are some tips to make sure your potatoes are the freshest:
*Store potatoes in a cool, dark place at about 50 degrees.
*Do not wash potatoes before storing, because the moisture can cause sprouting.
*Do not refrigerate potatoes.
Storage in temperatures cooler than 45 degrees converts the potato starch into sugar which changes
the taste and causes the potatoes to darken prematurely when cooked.
* Protect potatoes from turning green and acquiring a bitter taste by keeping them out of strong light.
If a potato has any green spots, simply pare these areas off before cooking.
